BIOTRANSFORMERS # 3 - DIP N DRIP - Piwne Podziemie. The third beer in an experimental series of beers, we used a relatively new hopping technique in it. Hop dipping was first implemented by the Spring Valley Brewery in Japan. It is actually a form of hopping at around 65°C -70°C that takes place in the fermentor and begins before the actual fermentation of the beer.

STORAGE CONDITIONS AND USAGE INSTRUCTION:
Malt should be stored in a clean, cool (< 22 °C), dry (< 35 RH %) and pest free environment.
Malt kit 20L - malts 3,1kg, hops 300g, additives 0,95kg
Yeast: The kit does not contain yeast, according to the recommendation of the Brewery Piwne Podziemie, the recipe should be made with hazy White Labs WLP066 London Fog. You can also choose one of the strains we recommend.
Fermentis S-33 - Fruity driven strain, gives a high mouthfeel and body to the beer. Ideal for Belgian Ales (Blond, Dubbel, Tripel, Quadrupel Styles) and strong English ales (ex. Imperial Stouts). It is also ideal for New England IPA’s. Yeast with a medium sedimentation: forms no clumps but a powdery haze when resuspended in the beer.
LalBrew New England - is an ale strain selected specifically for its ability to produce a unique fruit-forward ester profile desired in East Coast styles of beer. Produce tropical and fruity esters, notably stone fruits like peach. LalBrew New England exhibits medium to high attenuation with medium flocculation, making it a perfect choice for East Coast style ales.
Mangrove Jack's Hophead Ale M66 - A yeast and enzyme blend that enhances aromatics and esters, perfect for New England, hazy and fruit forward IPAs. Select enzymes improve aroma and flavour from late hop and fruit additions.
Wyeast 1318 London Ale III - It is a true top cropping strain with a fruity, very light and softly balanced palate. This strain will finish slightly sweet. London Ale III has become synonymous with the production of New England IPAs, also known as juicy or hazy IPAs, and balances well with the tropical fruit qualities from late and dry hop additions.
Fermentum Mobile FM55 Green Hill - Very misty strain dedicated to New England IPA beers, gives very nice, balanced fruit ester profile, emphesizing hopy aromas. May give strong phenols when used in lower temperatures.
White Labs WLP066 London Fog Ale - This is the go-to strain for New England-style IPAs. It produces a medium ester profile similar to WLP008 East Coast Ale Yeast. It leaves some residual sweetness, helping accentuate both malt and hop flavors and aromas, while retaining a velvety mouthfeel.
New England India Pale Ale - very fruity aroma, cloudy like freshly squeezed tropical juice, delicate with a smooth and full mouthfeel, low bitterness. A style that wins brewing hearts around the world. It tastes great at any time of the year!
NZ Hazy Pale Ale, is a beer that is sure to leave a mark on your taste buds! Created using New Zealand hops, this beer features a wonderful bouquet of aromas and flavours - tropical fruit, white grape, lime to name just a few.
