Tropical IPA is a unique Saccharomyces strain formerly classified as a Brettanomyces strain, that produces delicate, tart, tropical mango and pineapple fruit characteristics with a clean finish. Try it at its higher temperatures to bring out the tropical profile. It’s stubbornly non-flocculent, but worth it.
This strain tests positive for the STA1 gene, an indicator of Saccharomyces cerevisiae var. diastaticus, and is capable of fermenting dextrins, resulting in very high attenuation.

STORAGE CONDITIONS AND USAGE INSTRUCTION:
The yeast should be refrigerated (2-3°C).
1. Allow at least 3 hours for package to warm to room temperature
2. Shake package for 30 seconds to resuspend culture
3. Wipe package with a food-safe sanitizer before opening
4. Tear open at notch and pitch into well-areated starter wort

This blend of three strains creates a clean and neutral fermentation character, making it ideal for use in many different American beer styles. The blend lends complexity to finished beer by exhibiting a crisp, clean lager-like character with accentuated hop flavors and bitterness.
